MarFel's Kitchen Indonesian Layer Cake (Kueh Lapis Legit) Recipe

Hi.. hi..
To make Kue Lapis Legit, it will take about 2 hours for the preparation and 2 hours for the baking process. So just be prepared, my friends...:)

Here is our Kueh Lapis Recipe with some tips..

Any comments, feedback or questions are welcome.. And please leave your comment about your cake result..

Ingredients:
25 egg yolks
5 egg whites
450 gr butter
350 gr sugar
4 tbsp condensed milk
170 gr plain flour (or 150 gr flour; 20 gr powder milk)

 Steps:
1. Cream butter and sugar until white and creamy.
2. Add egg yolks, condensed milk, beat again until well mixed (not more than 5 minutes).
3. Shift flour and powder milk onto the batter, fold in using spatula.
4. Beat egg whites until stiff and then fold in the mixture using spatula until well mixed.
5. Grease and line an 8″ square tin (spread tin bottom part with thin layer of margarine, put on a square cake paper, spread again the bottom part with thin layer of margarine). Preheat the oven (200 degree C - top and bottom heat for 7 minutes).
6. Spread 1 small cup of the batter in tin and bake in oven with 180 degree C bottom heat for 8 - 10 minutes or until the surface yellowish & a little bit dry. Change with top heat (also 180 degree C) for about  2 - 3 minutes or until the cake surface is golden brown.
7. For subsequent layers: spread again 1 small cup of the batter and grill with 180 degree C top heat for about 4 minutes or until the cake surface is golden brown. Do not grill to long (or do not grill until the cake surface is dark brown), as the longer it is, the harder the cake will be.
8. For the most top layer: grill with 180 degree C top heat for about 3 minutes or until the surface is yellowish brown. Change the heat to 180 degree C bottom heat for about 7 minutes to finalize the baking, to make sure all of the parts are well done.
9. Immediately, slip a thin spatula on the cake edges to remove the edge parts from the tin, so that the edge will be neat.
10. Immediately, turn the cake out onto a metal grid, since if it's too long in the hot tin the cake will be shrinking. To make square pattern: after 5 minutes change the position/ turn it 90 degree horizontally (how to do it is: put the cake back into the tin (make sure the cake surface is on top), and then position it again onto the metal grid)). Let it cool completely before cutting. But feedback from my daughter is: it's best when it's served warm. Feedback from other friend is: it's best if you put it in the fridge first and then put in normal room temperature before served. You could try by your self to know which one is your preference :)

My First Cake Decorating Course, in Nov - Dec 2011

I'm very new in "Cake Decorating" world.
That's why I decided to sign up for a cake decorating class at the Bake It YourSelf.

"Wilton Method of Cake Decorating Course 1" was the course name, and it's provided into four sessions, conducted on Saturday afternoon (2.5 hours for each of the session), at a bakery shop house (Bake it Your Self) in 182 Bukit Timah Road, Singapore. The course fee is $270 (student starter kit and book are inclusive). And the instructor's name was: Katerine Kok.

I enjoyed the class.. although felt quite tough as we should accomplished some home works which is so challenging for a starter student like us, i.e.: to bring a cake covered with butter cream as the based cake for the decorating hands on in the class. I can tell you that covering the cake is not an easy job at all. The way you hold the spatula, they way you smooth up the surface, to avoid the bread crumbs come out, haizzz.. ^^

The other thing that we need to prepare was butter cream with appropriate consistencies: stiff, medium or thin. With regards butter cream, Teacher Katerine mentioned that try to use icing sugar without corn starch, meanwhile icing sugars in the market all are with corn starch. And what I did was: came back to the B-I-Y shop at Bukit Timah Road (from my office in Ang Mo Kio, during lunch time).. just to buy a pax of icing sugar..^^ as I wanted to have a perfect cake/ icing for my final project decorated cake.

But overall I can say that I really enjoyed the course and glad with the fruits that I got from the class.
I know about cake decorating basic now.. and become more confident as a baker. :)

My thanks to all who had supported me during this struggling time: my baking guru and adviser Mbak Deby Da silva, my dear husband David Gani, my pretty daughter Marielle Aurelia Gani, my handsome son Nicholas Rafael Gani and my home assistant Sawen. With the great supports from ya.. I could accomplished the projects (hufff) and received my first cake decorating certificate: The Wilton Basic Decorating Cake - Course 1 Certificate.. Hihihihi..

Result from the second lesson (decorating cake with butter cream (simple decoration)):
